Simplest Apple Pumpkin Granola

IMG_2540 I want  to make something tasty and fast and just for me. I don't want to worry about making anyone happy besides me.  I don't want to make a mess of my super clean kitchen.

A simple granola. I want to toast a handful of oats and mix it with some chunks of apple and enough pumpkin puree to bind it together. I want to just toss in some cinnamon and a pinch of allspice.

I made just enough for me. And besides, everyone is eating a shit ton of halloween candy.

I forgot the oat bran in the picture.… I wanted a little more heft to the granola,  and I just happen to notice it on the shelf when I was mixing this stuff up.

This is a guide line recipe. Do whatever feels right to you.. Add more sweet.. add some nuts… hell, add some chocolate chips if you want.

Simplest Apple Pumpkin Granola

  • 1 1/2 cup of oats
  • 1/4 cup of oat or wheat bran
  • 1 medium apple
  • 1/2 cup pumpkin puree
  • tablespoon cinnamon(more or less depending on your taste for it)
  • a pinch or two of allspice
  •  tablespoon of honey or maple if you want a little sweetness

Grate the apple into a bowl. Mix in pumpkin, spices and sweetener if you are using some.. Now add the oats and bran. Stir it all up. If it seems dry and crumply, add a tablespoon or two or water. Just enough were it all kind of sticks together.

Stick it on a greased cookie sheet or a parchment line cookie sheet and bake at 375 for about 45 minute. If you prefer a crunchier texture, bake for closer to an hour…. just keep your eye on it. Let it cool down for a few minutes before handling it, and then just eat it, and don't share with anyone because sometimes you shouldn't have to share… Let them make there own.

Pumpkin Puree

Now that halloween is over, its time to eat the pumpkins!

I make pumpkin puree on the reg… and it is so super easy, it makes you look like an ass for buying the can stuff. (I have a few cans on hand)

First thing first is to choose you pumpkin. I am a squash hoarder so I check my stock and make sure there isn't a squash with any mold or soft spots. Then its all about using the ugliest one, or the prettiest, depending on how you look at it.

Stick whole washed pumpkin in oven on 400 degrees .After about 30 minutes, flip that mother upside down and keep on baking. After another 20ish minutes it should be fork tender. If not, keep in oven until it is. When its ready, take out of oven and let sit and cool a bit.

Roasted Squash Seeds

After a rest, pull of the stem, cut in half and scoop out the seeds. Set seeds aside for roasting.

Place pumpkin flesh and skin in a blender or a vessel to emulsify. You can remove the skin if you want… but why? seriously, why? Let it Rip

Now what you may ask am I planning on doing with this …. Oh man. So many things. I'll let the suspense build for a little while. Until then, try not to eat it all standing in front of the fridge in your pjs cause thats not what I do. So good….so good.
